I haven't written much about individual breweries, and I think it's because there are so many great brewers out there, spotlighting a couple just didn't seem fair, BUT, reviewing beers for me is a hobby, but I always remember that for the brewers, it's a serious business, one that has seen many of them living on a knifes edge in recent years, so I think I do need to shine a spotlight on the breweries that I come across that are worthy of a mention.
Nestled in the small market town of Northallerton in the UK, award-winning micro-brewery Bayonet Brewing is making waves with its exceptional craft beers and their dedicated approach to brewing. Founded in 2021 beer enthusiast and serviceman Alex Postles, Bayonet Brewing is dedicated to creating special, high-quality beers that reflect both traditional and contemporary styles.And all this while Alex is still full-time in the forces … very impressive.
The Vision Behind Bayonet Brewing
Bayonet Brewing was founded on the principles of craftsmanship, quality, and community. Alex was an avid homebrewer, envisioned a brewery that not only produced great beer but also fostered a sense of camaraderie among beer lovers and suppliers, this is especially true in his native Yorkshire, where he is dedicated to working with other local businesses at every stage of the brewing, packaging and shipping processes.
The ultimate goal is to provide a craft beer destination in Northallerton.
Crafting Excellence
Bayonet Brewing prides itself on its meticulous brewing process, starting off with a 2.5bbl kit in his garage, each beer is crafted using the finest ingredients, sourced locally whenever possible. This small brewery employs both traditional brewing methods and modern techniques to create beers that are both familiar and innovative.
Signature Brews:
If you brew what you love to drink, then you always stand a better chance of producing better quality beers, Alex therefore doesn’t apologise for focussing on IPAs, Pale Ales, Stouts and Sours.
It Pays To Be A Winner: This is a hop-forward IPA with bright grape, citrus and gooseberry, balanced by a smooth malt backbone. It's a perfect example of Bayonet's commitment to quality and flavour.
Delta Lima Six: Here they wanted to brew something mighty and sessionable, DDH with citra and British Harlequin for a great blend of tropical and citrus notes.
Keyboard Commander: The citrus and pine in this one are amazing with a lovely dry bitterness at the backend, and strangely refreshing and morish!
The Future of Bayonet Brewing
They have recently upgraded their kit so that they can brew more of the beers people love. As Bayonet Brewing continues to grow, the small team remains dedicated to their founding principles. Future plans include expanding their beer range, increasing their distribution, and continuing to engage with the local businesses.
There will be more beers, more fans, more retailers and more awards coming through over the next 12 months, I’m sure.
